Yuzu

Yuzu (Citrus junos) is a citrus fruit plant that originates from East Asia.

The country of Japan is home to the highest production and consumption of Yuzu.
It is cultivated on a grand commercial scale especially in Kochi prefecture on the island of Shikoku, where large Yuzu groves can be found.

Yuzu trees can take as long as 18 years to reach maturity.
Its fruit looks like a small grapefruit with an uneven skin and it has many seeds.
It is very aromatic and has a tart taste similar to a mix of lemon, mandarin and grapefruit. It contains a lot of vitamin C especially in the skin.
Yuzu is rarely eaten as a fruit, however its aromatic zest is used to garnish some dishes and its juice is commonly used as a seasoning.
For example, Yuzu is an ingredient in the popular citrus-based sauce, ponzu.
It is also used in alcoholic drinks such as Yuzu liqueur and Yuzu cocktail.
